"Sammy's Pink Cookies"

My friend Melissa posted this recipe on her blog long ago and I wanted to try them. I told Sammy they were called "Kyra's pink cherry cookies" (that is what Melissa called them) and she ask who Kyra was. I didn't know so she ask if we could change the name....sorry Kyra (whoever you are) but they are now "Sammy's pink cookies"! Anyway, these cookies were a hit! I recommend this recipe for anyone that loves cherries or the color pink (they would be cute for a little girl Birthday party or Baby Shower)!
1 1/2 c. shortening
1 1/3 c. sugar
2 eggs
2 tsp vanilla
3 1/2 c. flour
1 tsp salt
1 tsp soda
1 (14 oz) bottle maraschino cherries chopped (save juice)
Cream sugar and shortening; add eggs and vanilla. Sift flour, salt, and soda together. Add sugar and shortening and egg mixture. Add chopped cherries. Bake at 350 for 8 - 10 minutes.
Frosting: Mix cherry juice, 2 tsp. vanilla and 1 cube butter add powdered sugar one cup at a time, until desired consistency.
(The frosting recipe seemed HUGE to me so I didn't make the full recipe...I probably did like 2/3 of this recipe and had PLENTY of frosting!)

I'm not crazy about cherries, but the picture makes them look yummy! (poor Kyra... I hope she didn't get her feelings hurt!) ;)

Delish! I think I'll let my boys make these tonight. Don't tell anyone I let my boys make pink cookies. "Jonah's Pink Cookies" is not a phrase I want out in the public.
